A day ago, I would have said "evolve for now," but since the gym rework is now officially confirmed to start being implemented barely a week from now, I would hold it until then.

My only word of warning is this.
If moves change they may treat Tyranitar like Dragonite. Bite is the same as DB from all aspects that I can tell. They could give him a stronger quick move that is slower. I would kick myself if I had never picked up a DB Dragon. That said who even knows if moves will change and who knows if they will be better or worse anyway? There are cases of both with the old mons in particular some of the stronger ones.

Very true. Who knows what movesets will be good post re-work? Bite might not be useful compared to whatever new moves he gets. But it's just as possible that the new moves are worse than Bite. It's really a crapshoot right now.

Agree with this as well...No one other than Niantic knows what will happen...
You can generally attack with any mons and as great as Bite/Stone Edge is...on the overall list of DPS, it's actually not as high as a lot of other mons...Reason being is SE does 100 damage for a 1 bar move when Outrage does 110 for a 2 bar move...Bite was also nerfed after gen 2 launched so if it was me (I have 230+ candies after 3 hatches and lots of walking, but no Larvitar over 90%), I'd wait.
Esp since the event and update is also less than a 1 week away and maybe gym update is 1 week away.
I don't need gym defenders that badly now and everyone will be kicked out in 1 week so high CP may not be critical in case gym rework changes all that.
Of course, Bite/SE can also get a BUFF so like it was stated, no one other than Niantic knows. Problem of course is you could end up with IT/Fireblast also. :)

Crunch does about the same damage per energy as Outrage at 210 to 220.
Stone edge and Hurricane are roughly the same with SE being a bit faster and Hurricane doing a hair more damage.
But bite is to Tyranitar as DB was to Dragonite.
Other than that I do not see enough difference to care about. One is a fast set that does moderate damage but allows dodging while the other does huge damage but can get you hit...a lot. And only one mon can get his best dodging quick move.

Even though that is true, it takes 3 Crunches to get to 210 damage. In that time, it would take you 9.6 secs CD to execute all 3. Since Crunch is slow, you will also get "exposed/hit" by 3 quick moves or possibly 3 charged moves...
Outrage would hit 220 damage with 7.8 secs CD. This saves 1.8 secs and you are also "exposed" less using 2 charge moves vs 3. In that 1.8 secs, you can do another Dragon Tail for another 15 damage, plus generate energy...Over 2 full charge move cycles, this translates to 3 more Dragon Tails...
From the spreadsheets I look at, T-rex is just pretty far down the list (58 B/SE and 98 B/Cr) compared to Dnite (11 DT/O) or even Eggs (20 C/SoB)...
Maybe andro can spell it out in more detail since I know the damage isn't really 110/70, etc...
On Pokebattler, a perfect level 30 Dnite (DT/O) finishes a level 36 Blissey with ZH/DG in 63.1 secs while a perfect level 30 Tyranitar (B/SE) takes 75.5 secs...(B/Cr) takes 77.5 secs.
Machamp (C/DP) takes 53.secs...
All using Dodge Specials Pro...(not dodging quick move)...

It's OK I understand the differences perfectly well.
Time is not the only standard and comparing the time of Machamp who has a different type of strength to weakness ratio isn't particilarly relevant.
My honest point is that Dragonite has strong moves because his type is so rarely SE. I doubt that they will give mons with legendary level stats moves that strong on purpose because it would imbalance them unless they are legendary or need them like Dragonite. And the moves he has work fine for his type, they are strong enough to get the job done and then some, the quick move is quick, and the mon itself finishes with way more health in a reasonable amount of time than other mons. I tend to doubt they buff that in the future. But who knows.

@Giordano how do you know? it's speculation or you're sure? it's been a while since the last moveset rework
@toAll does Tyranitar could have better move that the current moves? regarding console games or/and current move implemented but not in Tyranitar set?

It's simply better to wait because another thing that can happen is they can make quick moves VERY slow again...
This alone will require a LOT more teamwork and if things are slower, their servers maybe able to handle lag better so people can "cooperatively" play together to take down, now massively powerful Blisseys...
Solo play could be nerfed to the ground and people will be forced to quit or multiaccount with 2 phones at the same time to deal with gyms...If quick move cool downs are doubled, your changes of taking out a level 39 Blissey solo would probably be impossible...
Honestly, anything can happen with the rework so until it drops, everything is up in the air...

make sense. if the metagame change fundamentally, they will probably adapt new move to fit the gym rework! i think i'll wait thought
